Keto Almond Joy Bars

Ingredients:

Fudge Layer

  • 1 cup Chocolate Keto Chow
  • 2 1/2 Tbsp. cocoa powder
  • 1/2 cup almond butter
  • 1 cup water

Coconut Layer

  • 2 cups small coconut shreds unsweetened
  • 1/4 cup almond flour
  • 1/2 cup confectioner's Swerve
  • 2 servings Vanilla Keto Chow (or 2 scoops)
  • 1/2 cup water
  • 1/4 cup coconut oil
  • 1/4 cup slivered almonds

Directions:

  • In a medium mixing bowl, combine Chocolate Keto Chow, cocoa powder, almond butter, and water. Mix until smooth.
  • Press 1/2 of the fudge mixture into a greased 6x6 pan.
  • Melt coconut oil and combine in mixing bowl with coconut, Vanilla Keto Chow, sweetener, almond flour, and water. Mix until smooth.
  • Press coconut layer evenly on top of fudge layer.
  • Top with slivered almonds.
  • Cover coconut layer with remaining fudge mixture and top with the rest of the almonds.
  • Chill for at least 2 hours. Cut into 12 bars and serve.
