Keto Mushroom Pizza

This keto spinach and mushroom pizza is absolutely delightful.

Ingredients

  • 3eggs
  • 2.5oz.pork panko
  • 2tsp.dried dill
  • 2tsp.dried mint
  • 2Tbsp.sour cream
  • 1lb.ground chickenor substitute ground turkey
  • 1.5cupsCreamed Spinachlink to recipe here
  • 3oz.mozzarellasliced
  • 2oz.mushroomssliced (baby bella or button)

Instructions

  • Preheat the oven to 375℉.
  • In a bowl, add the eggs, pork panko, dried herbs, and sour cream and mix until thoroughly combined.
  • Place the ground chicken in a large bowl, pour in the egg mixture and, using a fork, mix together until you have a ball of dough.
  • Place a piece of parchment paper on a baking sheet. Spoon the turkey mixture onto it and spread evenly into a 12” circle using a spatula.
  • Bake for 20 minutes.
  • Spread the spinach evenly over the crust and then add the mozzarella and mushrooms.
  • Bake for an additional 10 minutes.
  • Allow pizza to cool before slicing.
