Ingredients

  • 6slicesbacon
  • 1.5lb.80/20 ground beef
  • 1.5lb.ground pork(can be substituted with additional ground beef)
  • 1medium sweet oniondiced
  • 2medium green bell pepperdiced
  • 2tsp.garlicminced
  • 3cupsorganic beef stock
  • 2Tbsp.chili powder
  • 4tsp.ground cumin
  • 2tsp.salt
  • 1tsp.ground black pepper
  • 0.5tsp.cayenne pepper
  • 30dropsliquid steviaor monk fruit optional
  • 2servingsCreamy Tomato Basil Keto Chow(or 2 scoops)

Instructions

  • Heat up a large cast iron pot or Dutch oven on medium heat.
  • Dice bacon and add to pot with coconut oil. Cook until fat is rendered but don't overcook; the bacon should still be soft.
  • Add ground beef and ground pork and cook most of the way through. Break meat into small pieces.
  • When meat is mostly cooked, add the pepper, onion and garlic. Allow to simmer until soft.
  • Add all spices, Keto Chow, and beef stock. Stir to combine. Add monk fruit or stevia, if using.
  • Turn heat to low and cover the pot. Allow to simmer for 1 hour. For a thicker chili, simmer with lid off for at least 30 minutes.
