You guys!!! Cream of mushroom soup! And it’s SOOOO legit! See other pictures and last nights post to see the possibilities of this! Tonight, I smothered chicken thighs and cauliflower rice with it and it was insanely good, even my caulirice-hating husband really liked it!!
Mix everything except mushrooms with immersion blender once thick (after about 1 minute).
Fold in finely chopped mushrooms.

NOTES:I’ve also made this with chicken except I did not need the xanthan gum for thickening.
