This low-carb reuben casserole is a great, hot meal to toss together quickly. Just layer and bake!
- 1cupspecial sauce
- 4oz.dill picklesdrained and chopped
- 8rye chaffles
- 20oz.sliced corned beef
- 8oz.sliced Swiss cheese
Preheat the oven to 400°F.
Mix the special sauce* and dill pickles.
Rip the rye chaffles into small pieces and spread evenly in a 9” x 13” casserole dish.
Spread the sauerkraut evenly over the chaffles.
Spoon the sauce over the sauerkraut.
Lay corned beef slices over the sauce and top with the Swiss cheese slices.
Bake in the oven for 15 minutes until the cheese is melted into the meat.
