Keto Reuben Casserole

This low-carb reuben casserole is a great, hot meal to toss together quickly. Just layer and bake!

Ingredients

  • 1cupspecial sauce
  • 4oz.dill picklesdrained and chopped
  • 8rye chaffles
  • 1lb.sauerkrautdrained
  • 20oz.sliced corned beef
  • 8oz.sliced Swiss cheese

Instructions

  • Preheat the oven to 400°F.
  • Mix the special sauce* and dill pickles.
  • Rip the rye chaffles into small pieces and spread evenly in a 9” x 13” casserole dish.
  • Spread the sauerkraut evenly over the chaffles.
  • Spoon the sauce over the sauerkraut.
  • Lay corned beef slices over the sauce and top with the Swiss cheese slices.
  • Bake in the oven for 15 minutes until the cheese is melted into the meat.
